Everything comes off the fire
We cook on split oak and cherry, over coals we tend all afternoon. No gas, no fryer, no shortcuts. The fire sets the pace of the kitchen, and the kitchen sets the pace of the evening.
Our vegetables come from four farms in the valley and our trout from a family a few ridges over. If it isn't good that week, it isn't on the menu.

You can smell the oak from the sidewalk. Book the long table if you can.

The ribeye is a lesson in patience. The beets nearly stole the show.
